1 quartered chicken

For the soak 
2 cups of milk
1 T cumin 
1 T chili powder 

For the breading:
1 C Doritos Crumbs (finely ground I use my food processor) 
1/2 C panko
1 t garlic powder
1 t onion powder
1/4 t cumin
1 t cayenne pepper
Pinch of white pepper
Pinch of black pepper 

2 eggs and flour for dredging

Soak the cut chicken and marinate for 1 hour to over night, set up a dredging station taking the chicken to the flour to the egg then breading mixture coating each piece evenly, let air dry 10 min, bake 30 min at 350 then increase heat to 375 till internal temp reaches 165.

Spicy 1000 island dipping sauce
2 T ketchup
2 T mayo
1 t relish
1 t minced jalapeno

8oz ground beef
1c milk
1/2 c flour
1/4 c +1T butter
1 small onion minced
7 slices of sharp. Cheddar
4 slices of provolone 
4 strips crispy bacon diced
1/2# dry pasta 
3oz ale
Montreal steak seasoning to taste
Seasoned breadcrumbs 
Dash Worchester sauce 


Boil pasta to desired doneness 

Sauté minced onion till translucent in 1 T butter, add ground beef and season with salt and pepper, brown off and remove from pan draining on a paper towel. Reserving 2 T of fat, melt remaining butter with beef fat on low heat. Slowly add flour till you make a roux. In a small sauce pan bring milk to a low simmer and slowly add in cheese, whisking till dissolved, add ale and roux stirring till thickened (if sauce gets too thick you can whisk in milk. Fold in bacon, and beef with a dash of Worchester sauce.  Fold in cooked pasta and place in a casserole dish top with seasoned breadcrumbs and bake  in a 350 degree oven till golden brown.

Chocolate Spiced Pulled Pork with Dr. Pepper BBQ Sauce

Here is one of my newest recipes that I have recently developed. The chocolate and clove give a unique and savory twist on this southern favorite. 

Chocolate and Spiced Pulled Pork

1 3 lb pork shoulder with the fat cap still intact 

1 Granny smith apple sliced

3 Cloves garlic whole

16 oz  water

24 oz  Dr. Pepper 

1/4 cup of unsweetened Cocoa powder

1 tsp ground clove

1 tsp Chinese five spice powder

1 Jalapeno pepper split in half 

Salt and Pepper to taste

Wash and season the pork shoulder with the salt and pepper. In a slow cooker add the pork shoulder and remaining ingredients. Cook on low heat for 9-12 hrs until the meat can be easily flaked apart. Remove the fat cap and transfer the meat to a clean bowl, pull apart using  2 forks being care full to remove any bone fragments. Add approximately 1/4 cup of the cooking liquid and let stand 10 minutes or until all liquid is absorbed. 

Dr. Pepper BBQ Sauce
 
2 Cloves of Garlic Minced

1 Small Onion Minced

1 Tablespoon of Butter

3 Tablespoon Chili powder

1/2 Tsp Cayenne pepper 

1 Tablespoon Cocoa Powder

2 Tsp brown sugar

Black Pepper to taste

8oz  Ketchup 

16oz Dr. Pepper

Saute the onions and garlic in the butter till they are soft, add ketchup and Dr. Pepper, whisk until combined, then add rest of the ingredients and bring to a boil, reduce heat to low and simmer 1-2 hours.

Serving recommendation:

Serve 8oz of the pulled pork with a generous amount of BBQ sauce on a good roll with your favorite coleslaw.   

Text 2 Mar Cheddar Cheese and Apple Wood Bacon Soup

Cheddar Cheese Soup: 

1lb cheddar cheese shredded

1/2 lb bacon

4 strips smoked apple wood bacon

10 t butter

5 c milk warmed

1 c celery chopped finely

1 length leek finely chopped

2 red onions chopped

1.5 c flour

1 qt chicken stock

2 tsp hot sauce

3 tsp Worcestershire sauce

Salt and pepper to taste

3 tsp Good ale

Slowly heat the milk, and brown the bacon separately from the smoked bacon and then when it is halfway browned add the smoked bacon render the fat together add butter and melt, then sauté the celery onions and leeks till they are translucent add flour and thicken to a roux, then pour in the stock simmer for 3 min. Next add the warm milk stir to thicken and cook out the roux un till its thick and does not taste starchy, lower the heat to low and stir in the cheese till its melted. Season with Salt/pepper/hot sauce/Worcester sauce  right before serving add the ale

If you want to reheat the soup you must be carefully not to bring to boil it will break the soup

Yields 1 gallon or so
